Fall Baking Hack-Apple Cinnamon Cupcakes!

A few weeks ago the kids and I had the pleasure of checking out the Bare Snacks pop up in Venice. The girls learned all about apples with a really fun hands-on exhibit. They learned how apples grow, and how they go from #farmtochip with just a few simple steps.
We've always loved these snacks because they're super clean (IT'S JUST CRISPY BAKED APPLES!), and majorly satisfy any crunchy or sweet craving. We came home with so many bags of goodies, and while I was making a vanilla cake with the kids I thought it would be a great idea to make some cupcakes, and throw apple chips in the batter. The result? The apples almost rehydrated while baking, and tasted like fresh apples within the cake except I didn't have to sit there cutting and peeling apples. That's my kind of baking hack! 
To take it over the top I swirled in some nutmeg and cinnamon and topped them with crunchy fresh apple chips for some texture. If I had even more time I would frost them with a cinnamon vanilla frosting and then top with crispy chips.. but honestly who has time for that?
All you need is a box of vanilla cake batter (or you can make your own), some Bare Snack apple chips, and cinnamon and/or nutmeg! Hope you love this simple Fall baking hack and let me know if you make these! Would love to hear your thoughts!
