Here's one of our favorite ways to use up leftover produce from the week. Throw it on a pizza with some lox and tartar sauce! It's a double win if you already have meal prepped tartar sauce that you can repurpose.
Either way you'll be the hero at your next breakfast, lunch or dinner!
Makes one pizza or serves 4
1 store bought, ready-to-eat pizza crust
1 cup homemade tartar sauce (recipe follows) or store bought
2 beef steak or heirloom tomatoes, thinly sliced
¼ of a purple onion, halved and thinly sliced
4-5 radishes, thinly sliced
4 oz your favorite lox, torn
1 cup gherkins, halved
2 tablespoons capers
1 bunch dill, torn
¼ cup crumbled or grated feta cheese
1 tablespoons everything bagel seasoning
Spread the tartar sauce all over the pizza crust. Top with Tomatoes, onions, radishes, lox, gherkins, and capers. Next add the freshly torn dill, crumbled feta, and optional everything seasoning to finish. Cut into wedges and serve!
1/2 cup mayonnaise
1 1/2 cup Greek yogurt
1/2 cup finely chopped gherkin pickles
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
salt and pepper to season
Place all ingredients in a mason jar and shake well.
