  • 1, 15 ounce can diced tomatoes
  • 1 cup green lentils
  • 8 cups vegetable broth
  • 2 cups baby spinach

  1. Heat a large soup pot over medium high heat and add the oil. Once heated, add the onion, celery, carrot, and bell pepper. Sauté until mostly tender, about 7 minutes.
