Gosh, can you believe we’re well into July already?! The summer is truly flying and the days and months
are blending into each other. #amirite?!
I truly hope you’ve all been staying safe, and sane. I know how much of a struggle it’s been for me being
stuck inside with two rowdy little girls and a five-month-old. I’d be lying if I told you it’s been easy
getting through the long days here. It’s been an adjustment but truly trying to find some positivity in the
months spent at home, and LOTS of family time.
As a professional meal prepper, I’m all about feeding the entire family with one menu and making small
modifications to make it work for everyone. That mentality is how I go about everything these days and
it’s how I am able to please most people with the least amount of effort.
When V8® asked me to share my favorite summer cocktail using V8 +ENERGY® Orange Pineapple, I
instantly thought of snow cones, a refreshing summer treat. I created a super fun grown-up snow cone
called the Orange Pineapple Snowball with Tequila! While mama relaxes and sips on her cocktail (hello
staycation!), I let the kiddos decorate their snow cone cups with gems and build their very own virgin
snow cones with the classic colorful syrups. Mama’s happy, kiddos are happy.

Orange Pineapple Snowball with Tequila
1/2 cup V8 +ENERGY® Orange Pineapple
3/4 cups sugar
juice of 1 lemon
1 chili pepper or jalapeno (to taste)
3 tablespoons tequila
Mix V8, sugar, lemon juice, and chili or jalapeno together in a small pot. Bring to a boil and simmer for
3-4 minutes until all the sugar has dissolved and mixture has thickened slightly. Let cool completely
(remove the pepper if it’s spicy enough otherwise leave it in with the mixture), and store in the fridge.
When ready to make cocktail add the tequila to syrup and mix well. Make snow and place one snowball
in two highball glasses. Pour syrup/tequila mixture over (either with a spoon or squeeze bottle) and top
with candied orange slices, lemon slices, and fresh edible flowers if you can find! Serve with a straw.
