Ingredients:
- 2 chickens cut into eighths
- kosher salt and pepper to season
- 2 tsp. paprika
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 2 tsp. oregano
- 1 red onion cut into wedges
- 4 garlic cloves minced
- 1 red bell pepper sliced
- 1 pint cherry tomatoes
- 2 yellow squash or zucchinis cut into rounds
- 3 Tbsp. freshly chopped basil
- 3 Tbsp. balsamic vinegar
- 2 Tbsp. honey
- 3 Tbsp. olive oil to drizzle
- Preheat oven to 400 degrees F.
Directions:
Preheat the oven to 400 degrees F.
Place chicken on a sheet pan and season with the spices
Add vegetables and basil to the sheet pan and massage all with balsamic, honey and oil
Bake for 45–50 minutes until cooked through and golden brown
