  • 2 chickens cut into eighths
  • kosher salt and pepper to season
  • 2 tsp. paprika
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 2 tsp. oregano
  • 1 red onion cut into wedges
  • 4 garlic cloves minced
  • 1 red bell pepper sliced
  • 1 pint cherry tomatoes
  • 2 yellow squash or zucchinis cut into rounds
  • 3 Tbsp. freshly chopped basil
  • 3 Tbsp. balsamic vinegar
  • 2 Tbsp. honey
  • 3 Tbsp. olive oil to drizzle
  • Preheat oven to 400 degrees F.

Directions:

  • Preheat the oven to 400 degrees F.
  • Place chicken on a sheet pan and season with the spices
  • Add vegetables and basil to the sheet pan and massage all with balsamic, honey and oil
  • Bake for 45–50 minutes until cooked through and golden brown
