large sweet potatoes

Crumbled feta
Fresh chives
chopped
Fresh dill
chopped
Salt and pepper
Instructions
Wash and scrub the potatoes, and wrap in silver foil. Place on a baking sheet and bake in a 400°F oven until soft.
Cut the baked sweet potatoes in half and scoop out a little bit of the filing to make a well for the eggs.
Crack the eggs into the well of each sweet potato half. Sprinkle a pinch of salt and pepper onto each boat.
Bake for about 20 minutes until the egg is cooked to your liking.
Garnish with fresh chives, dill, and a sprinkle of crumbled feta.
