Baked Egg Sweet Potato Boats

Ingredients
  

  • 2 large sweet potatoes
  • 4 eggs
  • Crumbled feta
  • Fresh chives chopped
  • Fresh dill chopped
  • Salt and pepper

Instructions
 

  • Wash and scrub the potatoes, and wrap in silver foil. Place on a baking sheet and bake in a 400°F oven until soft.
  • Cut the baked sweet potatoes in half and scoop out a little bit of the filing to make a well for the eggs.
  • Crack the eggs into the well of each sweet potato half. Sprinkle a pinch of salt and pepper onto each boat.
  • Bake for about 20 minutes until the egg is cooked to your liking.
  • Garnish with fresh chives, dill, and a sprinkle of crumbled feta.
