The Best Healthy French Onion Soup Recipe

- 3 Tbsp. oil
- 7 Vidalia onions peeled halved, and thinly sliced
- 1/2 cup balsamic vinegar
- 2 32 oz. boxes vegetable stock
- 1 tsp. oregano
- 2 tsp. garlic powder
- Salt and pepper to season
In a large pot heat the oil. Add the onions sautéing on medium-high heat for about 15-20 minutes. Allow the the onions to fully soften and break down.
Add the balsamic vinegar and let cook for an additional 2-3 minutes, mixing to incorporate.
Add remaining ingredients, bring to a boil, then lower to a simmer, and cover with a tight fitting lid.
Let cook for an hour (or even two if you have time to deepen the flavors even more!)
Serve in soup bowls with slices of bread and enjoy!
