Burst Tomato Chicken

There’s nothing we all love more than a one pan recipe, and this Burst Tomato Chicken recipe is the ultimate. This Burst Tomato Chicken recipe has a gourmet feel, but is still easy enough to make on a day you are running. You can never go wrong with chicken, and here is your time to go right.

Burst Tomato Chicken Recipe:

Ingredients:

  • 2 chickens, cut into eighths
  • 2 pints cherry tomatoes
  • 2 teaspoons garlic powder
  • 2 teaspoons oregano
  • 2 teaspoons mild curry powder
  • 2 tablespoons honey
  • 3 tablespoons olive oil
  • Salt and pepper to season

Directions:

Line a baking sheet with parchment paper.

Place the chicken and tomatoes on the parchment paper and coat in the spices, honey and oil. Roast chicken in a 450°F oven on the top rack for 50 minutes or until cooked through.
