Apple and Cinnamon Cake with Honey Glaze

Ingredients:
3 large eggs
1 cup sugar
1⁄2 cup avocado olive oil
1 cup all purpose flour
1⁄2 cup almond meal
1 1⁄2 teaspoons baking powder
1⁄4 teaspoon salt
1 teaspoon vanilla extract
1⁄2 teaspoon orange zest (from one orange)
3⁄4 teaspoon cinnamon
1 large, or 2 medium apples peeled and finely diced (around 1 cup diced apples)

For the Glaze:
1 cup powdered sugar
2 tablespoons honey
1 tablespoon oat or nut milk

Instructions

In a medium bowl, beat the eggs, sugar and oil for about one minute at medium speed, until creamy. Add the flour, almond meal, baking powder, salt, vanilla extract, orange zest, and cinnamon and beat until combined. Stir in the diced apples and then pour the mixture into the pan.

Bake for 35 minutes or until a skewer inserted in the middle comes out clean.
Let the cake cool in the pan for 10 minutes and then run a knife around the sides. Turn the cake onto a wire rack and let it cool completely.
After the cake has cooled completely, whisk all glaze ingredients together in a small bowl until there are no clumps. Drizzle the glaze over the top, serve, and enjoy!
