Let’s spice things up with this one pan dinner!
As a mom and owner of a small business, I am always thinking of easy one pan meals I can make to get dinner on the table on time. Cue this one pan dinner of Cheesy Cajun Pasta. And while we’re talking about ease, get this: You don’t need to go through the trouble of cooking the pasta first. Just mix it into that same baking dish as the rest of your ingredients. Ah the beauty of a one pan meal.
It’s amazing how much one tablespoon of seasoning can switch up your whole dish. The cajun seasoning in this recipe takes it from boring old Mac and cheese, into a Cheesy Cajun Pasta bake. Enjoy this for dinner, and save leftovers for lunch! I can live on this one pan dinner recipe!
Ingredients:
- 1 green bell pepper, sliced or diced
- 1 small red onion, sliced or diced
- 8 ounces cream cheese
- 2 1/2 cups water
- 1 pound penne pasta
- 2 cups milk
- 1 cup parmesan cheese
- 2 cups shredded mozzarella
- 1 1/2 tablespoons cajun seasoning
- 1 cup mozzarella cheese
Directions:
Preheat the oven to 400°F.
In a large bowl, whisk the cream cheese until soft. Whisk in the water, milk, parmesan, and cajun seasoning. Once combined, add the pasta, bell pepper, and red onion. Stir until combined and pour into a 9×13” baking dish.
Cover the baking dish with foil and place into the oven and cook for 45 minutes.
Remove from the oven, uncover, and stir. Sprinkle the mozzarella over the top, put the oven on broil, and place back into the oven. Broil for about 5 minutes until the cheese on top is golden brown and the edges are bubbling.
Let cool for about 5 minutes before scooping and serving.
