Quick and Easy Dinners in Under 20 Minutes

What are some times that you may need quick and easy dinners to be ready in under 20 minutes? I can think of such times.

Burnt out, short on time, missed the meal prep, or forgot about the family’s dinner? I feel you!

To get a family dinner on the table in 20 minutes or less, you’ll have to quickly prepare 3-4 main things and leave the assembling to the kids. Bring out your Prep and Rally Wooden Board for serving, and get them involved in that process so they will actively get ready to eat sooner. That is how you get these quick and easy dinners done.

Cauliflower Shawarma Tacos (or grain bowls) with Shawarma Tahini Sauce

Toss cauliflower florets in oil, salt, 1 tablespoon onion powder, 1 tablespoon garlic powder, 2 teaspoons turmeric, and 3 tablespoons honey. Place on a baking sheet and bake at 450° for 20 minutes until golden and crisp.

If making a grain bowl, prepare grain of choice according to box directions and divide evenly into bowls. If not, char some tortillas on an open flame. Top with shawarma cauliflower, pickled onions, cucumber, pomegranate seeds, arugula, limes, radish. Drizzle with a tahini sauce mixed with maple syrup, cilantro, lemon, and water.

Sub Sandwiches with Aji Lime sauce and Pickled Vegetables

Display the following on a wooden board (Prep and Rally Wooden Board would be best!) and have everyone assemble their own sub sandwiches. Grill the sandwiches or place in a panini press if desired, and serve with chips!

Use some: Deli meats, Violife Vegan Cheese, pretzel buns, pickled vegetables, greens or lettuce, sliced tomatoes, sliced olives, pepperoncini, other condiments of choice, and-
Aji Lime Sauce:
1 cup mayonnaise, 2 cloves garlic minced, ¼ cup lime juice and zest of two limes, 2 teaspoons smoke paprika, 2 cups chopped parsley, 1 teaspoon salt, 3 tablespoons chopped jalapeno (optional).

Here is your second of the quick and easy dinners!

 

Tuna Melt Khachapuri with Zaatar, Sesame, and Salad

Heat oven to 475°F. Mix 2 cans of drained albacore tuna with 2 cups of shredded cheese and set aside.

Divide store bought pizza dough into 4 equal pieces and working on a lined baking sheet, stretch each piece of dough into oval shapes. Place one fourth of the filling right down the center of the oval. Twist either end of the dough together similar to twisting a candy wrapper. Finish the rest and place with two on each baking sheet. Press the center of the cheese and tuna mixture down with a spoon to create a well for the eggs.

Brush each dough with a beaten egg and top with zaatar and poppy seeds. Bake for 9-12 minutes. Once golden, open the oven, and pull baking sheets halfway out. Crack one egg into each well and bake for additional 3-4 minutes until desired egg doneness. Serve with side salad of choice.
