Easy One Pot Veggie Couscous Recipe

For a quick and easy meal or side, try making a delicious one-pot veggie couscous. Simply sauté your favorite vegetables, add flavorful spices, and stir in couscous and vegetable stock.

Ingredients
  

  • 2 Tbsp. extra virgin olive oil
  • 1 small sweet onion diced
  • 1 red bell pepper diced
  • 8 oz. mushrooms sliced
  • 4 garlic cloves minced
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 3.4 cup dry white wine
  • 1 15 oz can chickpeas
  • 1 15 ounce can fire roasted tomatoes
  • 1 cup cup green peas
  • cups pearl couscous or gluten free cous cous
  • cups vegetable broth
  • lemon wedges to serve

Instructions
 

  • Heat a large skillet over medium heat and add the oil.
  • When the oil is hot, add the onion, bell pepper, and mushrooms. Saute until mostly tender, about 5 minutes. Stir in the garlic, paprika, salt and pepper. Saute another 2-3 minutes. Stir in the wine and let cook, scraping and deglazing the pan, for 2-3 minutes or until the wine has cooked off. Then stir in the chickpeas, tomatoes, peas, and couscous, and saute for about 3-4 minutes.
  • Stir in the vegetable broth and bring to a low boil. Reduce the heat to simmer, then cover and cook for about 25 minutes or until the fluffy couscous is tender. Serve hot!
